Cookie Dough

I am a chocoholic. But even more than that, I’m a cookie-dough-aholic. I could eat cookie dough for every occasion, at every meal. And it doesn’t matter what kind. I just love it so much. And if I die of salmonella… well, so be it. At least, I’ll die happy. Probably in a cookie-dough coma. I usually don’t care about the eggs in them. My mom fed us cookie dough, she ate cookie dough when she was little, and nothing has happened yet. But I’m trying to be more health/germ conscious. So I found THIS. Yes. If you rolled over that, you read it right. It is a recipe for a single serving of chocolate chip cookie dough. And here’s the kicker: with NO eggs. No eggs, no salmonella. Single serving, so I don’t gain 10 lbs overnight from eating a whole bowl. I mean, there are no downsides to this. AND it whips up in like 2 seconds.

Br-inner

I planned for one night this to be “Breakfast for Dinner.” Growing up, I always loved this. So, I thought, “Why not?” We have eggs, and a meat, and toast all the time. I wanted to spice it up and so I found this Breakfast Casserole (RECIPE). It had all out favorite things in it: bacon, hashbrowns, eggs, cheese. I mean, how could a person go wrong? Well, I made it for dinner, but my daughter and I were the only ones to eat that night, so we just had a little bit of it. The next day, my parents invited us to breakfast, instead I offered to bring over my casserole. It was even better the next day! And it was gone. I’m pretty sure someone licked the pan clean.

Next time, though, I think I’ll use sausage instead of bacon. We are sooooooooo picky about bacon at my house. Sausage? Not so much. 🙂 Enjoy your Brinner!

Baked Ziti

Another delicious dinner we had last week was Baked Ziti. I’m a fan of anything Italian. I mean it, I L-O-V-E Italian food. Sometimes I think I was born in the wrong country. That’s how much I love it.

We needed a fast, easy meal that everyone (meaning my family and my parents) would all love. We ate a lot together last week. Anyways, noodles are always a safe bet, because well… they are noodles. And so is anything spaghetti like. But with my daughter’s favorite meal being spaghetti, we get a LOT of spaghetti at our house. So, I decided to change it up a bit, and it was a hit! Chicken, Chicken

So, over the last two weeks I have made a couple of delicious chicken recipes.

First: Chicken Casserole. I made it because it seemed like it would keep us fed for a couple days. And it did. my husband even got to take some for lunch. However, when I made it,  it turned out a little dry. I’m not sure why. I added a teaspoon of minced garlic and a cup of mozzarella cheese to the mixture, and I think both added to it. It was yummy, and had a lot of different textures (like the slivered almonds!). However, I think to add to it so it wasn’t dry, next time I’ll add some sour cream or maybe some milk… We will see! Second, we had BBQ Chicken sandwiches the other night. I made my chicken in the crockpot using this recipe: RECIPE. Who doesn’t love their crockpot? Well if you don’t, we can’t be friends. This recipe was so easy. I through my frozen chicken breasts in and forgot about it until we had the juiciest, best tasting BBQ chicken EVER. I honestly don’t think we will be using another recipe at our house. I think that they type of BBQ sauce you use probably depends on your taste, but I used KC Masterpiece Original Barbeque Sauce. Man, oh man, was it good. My mom used this on some ribs on Mother’s Day (Why was my mom cooking her own dinner on Mother’s Day? We still don’t know…) but those were amazing, too! So, give it a try.

Third, we made Garlic Brown Sugar Chicken at my husband’s request (he is picky). I know I found a recipe somewhere on Pinterest, but I can’t find it. So I’ll just tell you what we did.

  • Get as many chicken breasts as you have people (we did 5)
  • Get some garlic (we used freshed and minced it ourselves, but the pre-minced stuff works fine. Also, we will need as many cloves as you have chicken breasts.)
  • Get some brown sugar (As many tablespoons as chicken breasts)
  • Some oil (olive oil is great, but we used avocado oil

Then this is what we-because it was my mom and I cooking-did:

  1. Saute the garlic in the oil. I didn’t worry about measuring because I knew I was going to add more when I added the sugar. Just enough to get your garlic nice and golden. It doesn’t take too long and smells amazing.
  2. When it’s finished, I added the brown sugar to the pan and stirred it up. Adding oil as I went, until it was thoroughly mixed and a kind of thick slurry consistency.
  3. Place the chicken breasts in a single layer in a greased baking dish, then season with salt and pepper and pour your garlic-brown sugar mixture over the top, a little over each breast evenly.
  4. Bake at 400 for 30-40 min until the center is no longer pink.
  5. ENJOY!

Strawberries

We’ve been buying strawberries at Costco. Yum! 🙂 But there are are just to many for us to eat before all 4lbs goes bad.  So I have a bowl,  just a small mixing bowl,  and I fill that up. Those are the fresh ones that we eat during the week. The rest get washed, quartered, but on a baking sheet lined with parchment paper, and frozen. That way the are perfect for smoothies and we don’t waste 3.5lbs of strawberries! Once frozen, I divide then up into quart freezer bags and they are ready for use.

But the best thing about freezing them this way is that you don’t get a huge frozen strawberry chunk that you can’t do anything with!  Trust me, this is the way to do it!

Brownies

Just a quick little blurp.

  1. I love Costco.
  2. Costco has these Ghirardelli Brownies.
  3. 6 packs of chocolatey-melty-gooey goodness.
  4. GET SOME!
    1. You won’t regret it. I just whip up them anytime I need (or feel) like we need dessert.
  5. They don’t last long, so indulge yourself.

What’s on the Menu?

On Tuesday, I had to take my little one to the doctor. Her ear infections are becoming a frequent occurrence. 😦 Not so fun. Poor little thing was up all night. A few more and we might have to consider tubes. But I guess we will cross that bridge when it comes.

Luckily we had leftovers.

But on Wednesday I was looking for something quick, easy, and made of beef. Why beef, you may ask? Well we just got a generous contribution to our freezer from my husband’s wonderful employers. So of course I wanted to use some of it ASAP.

Well, when I think quick and easy, I think Crockpot. I love the crockpot. Sometimes I forget about it though. You know, cause we are trying to be healthier with fresh ingredients and stuff… Anyways, we got a bunch of ground beef. And it just so happened on my meal plan (I’ll post my meal plan for June when it’s ready!), that Sloppy Joes were in order.

So I used this recipe: RECIPE

I followed it as is. (It’s that great!) But it will only feed a small family that way. It only feed myself, my 3 year old, and my husband with no leftovers. So considering family size, you may want to double, or even triple. It also depends if you like Sloppy Joes, because you are going to want A LOT if you do.

We just got some frozen fries and buttered some corn to go with it. I think it’s important to mention the sides, don’t you? I mean, “Yeah. Great. You had Sloppy Joes. But what did you have with them?” Right? I mean that’s what I think half the time I’m reading a recipe. Like, “This sounds amazing! But what the heck are we going to have with it?”

Anyways, with some fries and corn and we were set. YUM! 🙂
